I've been doing a lot of research and keep coming across the idea that, with all my conditions combined, an anti-inflammatory diet could really help me. I can do dairy free somewhat easily, and I'll work on going sugar free, but as a picky eater on a tight budget I'm not sure how to maintain gluten free eating while still getting enough calories.

Have you tried cauliflower rice? I process a cauli to rice texture then pop in a roasting dish, drizzle w oil - garlic oil is v nice and season- toast in a got oven for about 20-25 min till nice and roasted. Even my cauli hating husband will eat it like This... v nice as a base for salads or instead of pasta and rice and can make fritters from it too
Hey there, I have been on a whole food plant based diet (vegan) for awhile and just went gluten free as well in hopes of further helping the inflammatory issues. I would recommend experimenting with potatoes, rice, beans, GF oatmeal, and GF pastas (my favorite is rice or lentil). There are so many varieties of potatoes to try, fairly inexpensive, and can be cooked a ton of different ways (hashbrowns, baked, steamed, my favorite is oil free baked fries with several dips!). Also give soups and stews a go, I am the same way about textures and soups have done wonders for me. Add in higher calorie items like GF grains, beans and/or potatoes. Smoothies are an awesome way to get nutrition and calories in - bananas add a lot of flavor, creaminess, and calories if you need it...throw in some greens for extra boost that you wont be able to taste.
Be patient with yourself, it takes a lot of testing to find what you like - try to focus on a few foundation items and then experiment further. Pinterest is a treasure trove for recipes and ideas! Good luck!
